Can you use a substitute for the cream cheese?
Yes! You can use cottage cheese, greek yogurt, or sour cream instead of the cream cheese. Full-fat versions yield the best results.
Can you season the Cloud Bread Keto Recipe?
Yes! Add 1/2 tsp of dried herbs or garlic powder to the egg yolk and cream cheese mixture. It makes a more flavorful, delicious bread that way.
For a sweet version, add 1 TB of your favorite granulated sweetener to the egg yolk and cream cheese mixture. Also, adding 1/2 tsp of cinnamon takes the bread to the next level.
For a fun color swap, you can use beet or spirulina powder instead of turmeric.
What’s the best way to store this cloud bread?
Keeping it in an airtight container is a good idea here. Once the bread has cooled completely, place it in an airtight container in the refrigerator. It will last there for several days. You can also freeze it. When you want to use a slice, first allow it to defrost and then toast it for the best results.
However you decide to enjoy it—toast it up, slather some nut butter on it, make it a pizza, a sandwich or a strawberry shortcake—this cloud bread keto recipe is not a bad low-carb way to get in some mushrooms that will benefit your health.
Cloud Bread Recipe
Ingredients for cloud bread
- 3 eggs, separated
- 3 TB full-fat cream cheese, room-temperature & softened
- 1/4 tsp cream of tartar
- 1/2 tsp Real Mushrooms Cordyceps Mushroom
- Optional - 1/4-1/2 tsp turmeric
- Optional - 1/4 tsp salt
- Optional for savory version - 1/2 tsp herb or seasoning
- Optional for sweet version - 1 TB granulated or powdered sugar and 1/2 tsp cinnamon
Tools you’ll need
- Electric stand mixer (or handheld)
- Two mixing bowls
- Baking tray lined with parchment paper

Toppings for cloud bread pizza
- Tomato or pizza sauce
- Fresh basil leaves, chopped up
- Mozzarella cheese
Toppings for strawberry shortcake cloud bread
- Strawberries
- Coconut whip cream
- Jam
Directions
- Preheat the oven to 300°F.
- Separate the egg whites from the egg yolks in two bowls.
- Add the egg whites to the cream of tartar and whip with an electric mixer until stiff peaks form.
- To the egg yolks, add Real Mushrooms Cordyceps, salt (if using), turmeric (if using) and cream cheese. Mix well.*
- Pour half of the egg whites into your egg yolk mixture and gently fold. Then add the rest and fold again until well incorporated.**
- Line the prepared baking sheet with parchment paper and place six dollops of the mixture onto the tray.
- Spread the dollops out into circles with a spatula until they’re about 1/2 inch thick.
- Pop the tray in the oven and bake for 25-30 minutes or until you see golden edges. The center should not jiggle.
- Allow to cool for at least an hour.
- Enjoy as-is or turn into a pizza or a strawberry shortcake.
Notes
*At this step, you can also add your 1 TB sweetener and 1/2 tsp cinnamon if you’re going for a sweet version. Or you can add 1/2 tsp of your favorite herb/spice if going for the savory.
** When folding in the egg white mixture into your egg yolks, be very gentle. You don’t want to deflate the meringue mixture, try to keep it firm and foamy. This way you can help ensure you get that fluffy, bread-like texture.
Directions for pizza
Right after your cloud bread comes out of the oven, spread on a thin layer of tomato or pasta sauce, add mozzarella cheese, and some chopped-up basil. Stick it back into the oven until the cheese has melted. Enjoy!

Directions for strawberry shortcake
After your cloud bread has cooled completely, spread a layer of jam, layer on a few chopped strawberries, and go as high as you like with coconut whip cream. Enjoy!
