These complex polysaccharides are where much of the immunological benefits come from which is why it is so important to validate and guarantee beta-glucan content.

A lack of beta-glucans can be attributed to many things, but most notably, grain based mycelium products (mycelium on grain, or "MOG") in the industry, which contain mostly grains, but are sold as mushroom products. These alpha glucans in mycelium on grain (MOG) products, line up almost identical to starch, using AOAC validated methods.
